  • Makes: 10 balls

  • Prep Time: 10 minutes

Materials

  • Blender or food processor

  • Large mixing bowl and spoon

Ingredients

  • 1/2 cup almonds

  • 1/2 cup cashews

  • 1/2 cup walnuts

  • 1/2 cup shredded coconut

  • 1 cup chopped pitted dates

  • 1/2 teaspoon cardamom powder

  • 1/4 teaspoon dry ginger powder

  • 2 teaspoons ashwagandha root powder (optional)

  • 2-3 teaspoons ghee

Directions

  1. Grind up the almonds, cashews, walnuts, shredded coconut, and chopped pitted dates along with cardamom powder, dry ginger powder and Ashwagandha powder in a blender or food processor until they become a fine powder. Add them to a large mixing bowl.

  2. Add 2-3 teaspoons of Ghee. Use your clean hands to mix everything together.

  3. Take a small amount of the batter and begin to roll it in the palms of your hands.

  4. Place the rolled energy balls onto a plate.

  5. Store them in airtight container. As we have not used water for soaking the dates or while rolling the balls, they will not go bad for many days up to 2 months.

They are balancing for all body types during the warmer seasons and can be enjoyed regularly in moderation.

You can roll these balls in shredded coconut if you like or even dip in chocolate.

Ingredient tip: Feel free to play around with the ingredients a bit! You can add honey for extra sweetness, add hemp seeds, flax seeds for extra fiber, add raisins, cranberries, goji berries and other dried fruits. You can add 2 teaspoons of Spirulina powder for additional nutritional power.

Enjoy!
